For the month of July we decided to take advantage of the hot weather and Rebecca’s patio and have a breakfast potluck at her place.
We had sausages, muffin tin egg cups, hash browns, cantaloupe, bread with homemade saskatoon berry jam, and even a breakfast dessert of rhubarb ice cream sandwiches. Oh, and don’t forget the mimosas!
I brought the hash browns, originally I was going to make them from scratch but would have had to get up early to do so, I decided to take the easy route and buy a bag of Supdlers Breakfast Hash with Bacon from Costco. The bag includes potatoes, peppers, onions and bacon. I just fried it up and put it into a heated up crockpot for transportation. It was super easy and tasty.
Nathania brought the muffin tin egg cups and while I don’t have the recipe she used, if you Google it, there are lots of options and variations. I have made this type of thing before and then used them for an easy breakfast to take to work. Here is one recipe option, but really you can play around with different meats (or no meat) and vegetables.
As a nice treat Chelsea and Rachael made us some delicious vegan rhubarb ice cream sandwiches. The recipe they used gives you both the vegan and dairy option. I think I need to start eating ice cream for breakfast more often!
